Hussar (often called Coral Sea Perch) is a very good eating reef fish and quite popular with many reef fishers.
Eating Qualities
Flesh: White, fine-grained and firm
Flavour: Mild, slightly sweet and very clean
Oil Content: Low to medium
Texture: Delicate but holds together nicely when cooked
Hussar has a lighter flavour than many larger reef species, making it great for people who don’t like strong fish. When fresh, the fillets are soft and delicate with a nice flake.

Pan-fried fillets
Whole baked or steamed
Lightly grilled
Beer battered or crumbed
Because they’re usually smaller fish, they’re excellent cooked whole or as smaller fillets. Properly iced and fresh from the reef, Hussar is a very clean, sweet-tasting table fish.
